Vegetarian Gu Lou Yuk in Sweet and Sour Sauce

 

For this vegetarian sweet and sour recipe we use vegetarian stewed mutton. This will be fried in oil and coated with a dough. Then we add the sweet and sour sauce to it and it's done.



Sweet and Sour Sauce:

For the sweet and sour sauce we need a broth of different ingredients, mostly fruits.

Chop these ingredients into large pieces:
- apples
- oranges
- lemons
- ginger
- carrots

Then boil them in water until they get soft. Probably half an hour on medium heat. Filter out the waste afterwards and keep the broth.


Bring this broth to a boil and add vinegar, concentrated tomato paste and sugar. If you want to make it look nicer, you can add pieces of pineapple and red paprika. Add a small amount of maizena + water to thicken the sauce and it's done. The volumetric ratio of water/sugar/vinegar/tomato paste is 1/0.25/0.12/0.12.

Here is the result of my sauce.

Dough:

Now we make the dough (it should be pretty thick). Mix these ingredients:
- 1 egg
- 1/4 cup corn starch
- 1 cup water
- 1 tea spoon salt
- 1 1/4 cup flour
- 3 tea spoons of vegetable oil
- 1 table spoon baking powder

Then add the vegetarian mutton in the dough and fry them for 4 minutes.


Add the sweet and sour sauce over the fried mutton and you're done!

Tarragon Dressing






This week I experimented with tarragon because I had tasted tarragon dressing at my local restaurant and wanted to make it myself.


So what did I do?

I mixed the following ingredients.

- 1 cup of sour cream
- 1/4 cup of capers
- lemon juice
- 1/4 cup of mayonnaise
- pepper and salt (add a good chunk of the salt)
- 10 stems of chopped tarragon
- 1 tablespoon of dijon mustard
- 1 tablespoon of olive oil

It was delicious. I found that I didn't add enough of the lemon juice, capers and salt, so don't be afraid to add a good amount of those ingredients.

This dressing is perfect for a salad or you can even use it for dipping french fries.
